One cost per item, overwritten on every delivery. So a sale from last March is costed at today's price, an item you never costed counts as zero, and the inventory value you hand your accountant is a guess in the shape of a figure. True COGS is a dated ledger of what you paid. Every price is recorded and never overwritten, so any past date has a real cost behind it. Weighted average or FIFO, freight and duty landed in, bundles from their parts, and month-end COGS posted to QuickBooks or Xero.
